Production Process
Fruit marc spirit is produced from the fermentation and distillation of fruit marc (freshly crushed, including skins, seeds, stems, etc.) other than grape marc. It must be distilled and / or re-distilled at less than 86% vol. and the spirit must have a (a) minimum volatile substances content of 2g / litre of pure alcohol (lpa), (b) maximum methanol content of 15g / lpa, and (c) maximum hydrocyanic acid content of 0.07g / lpa.
The legal name consists of the name of the fruit followed by 'marc spirit'. If marc of several different fruits is used, the legal name is 'marc fruit spirit' and may be supplemented by the name of each fruit in decreasing order of the quantity used.
Strength
Fruit marc spirit sold to consumers has a minimum alcoholic strength of 37.5% vol..
Permitted
- The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste.
- The addition of sugar is limited to a maximum of 20g / litre of fruit marc spirit.
Not allowed
The addition of any other alcohol and the use of flavourings.
