Production Process
Juniper-flavoured spirit drinks are produced by flavouring alcohol of agricultural origin, grain spirit or grain distillate with juniper berries (2 different types can be used). In addition to juniper berries, flavouring substances, flavouring preparations and / or plants (or parts of them) with flavouring properties may be used as long as the juniper taste remains discernible.
Juniper-flavoured spirit drinks are also permitted to be called Wacholder or genebra. Furthermore, as with other categories, the name can be replaced by that of a registered ‘geographical indication’ (GI): the juniper-flavoured drink category is notable for its many GIs using the names genever, jenever and genievre. Each GI is made to its own specific characteristics.
