Pastis is an aniseed-flavoured spirit drink, made by flavouring alcohol with anise, star anise and /or fennel, as well as natural extracts of liquorice root, the latter adding glycyrrizic acid (up to a maximum of 0.5g / litre) and colourants known as chalcones (subject to a minimum of 0.05g / litre). Other flavouring preparations and natural flavouring substances may also be used. Pastis has an anethole content of between 1.5g and 2g per litre.
