Production Process
Crème de (followed by the name of a fruit or the raw material used) are liqueurs which have a minimum sugar content of 250g per litre. Like all liqueurs, they are made from alcohol or distillate of agricultural origin or one or more spirits (or a combination of any of them), which has been sweetened and to which one or more flavours, agricultural products or foodstuffs (excluding milk products) have been added.
The name crème de (followed by the name of a fruit or the raw material used) can be supplemented by the term ‘liqueur’.
The legal name 'crème de cassis' may only be used for liqueurs produced with blackcurrants, which have a content of sweetening products of more than 400g per litre expressed as invert sugar.
