Production Process
Maraschino, marrasquino or maraskino is a colourless liqueur, whose flavour comes mainly from either (a) a distillate of marasca cherries, or (b) the spirit made from macerating (soaking so as to extract or concentrate flavours) cherries or parts of cherries in alcohol of agricultural origin. It is possible to macerate in distillates of marasca cherries.
Maraschino, marrasquino or maraskino has a minimum sugar content of 250g per litre and can use flavouring substances and flavouring preparations. Its name can be supplemented by the term ‘liqueur’.
