Production Process
Birch/maple/birch and maple spirits are sustainable and wild-foraged with a smooth, slightly woody and earthy profile. They are produced by the fermentation and distillation of fresh birch or maple sap or both. It must be distilled under normal pressure at less than 88% vol., so that the distillate has the organoleptic characteristics from birch, maple, or both.
Strength
Birch/maple/birch and maple spirit sold to consumer has a minimum alcoholic strength of 38% vol.
Permitted
-The use of caramel to adapt the colour
-The addition of sugar to ‘round off’ the taste (maximum of 20g/litre of birch/maple/birch and maple spirit).
Not allowed
No addition of any other alcohol or flavouring.
