Production Process
Bread spirit production in Europe is an emerging, sustainable, zero-waste practice turning unsold bread into high-quality craft distillates. Bread spirit is the fermentation and distillation of fresh bread mixed with water. It must be distilled under normal pressure at less than 86% vol., so that the distillate has the organoleptic characteristics of the raw material.

Strength
Bread spirit sold to consumer has a minimum alcoholic strength of 38% vol.

Permitted
-The use of caramel to adapt the colour
-The addition of sugar to ‘round off’ the taste (maximum of 20g/litre of bread spirit)

Not allowed
No addition of any other alcohol or flavouring.
