Production Process
Cider spirit, perry spirit and cider and perry spirit are produced by the distillation, at less than 86% vol., of cider or perry so that the spirit has an aroma and taste derived from the fruits used.
The spirits must have a minimum volatile substances content of 2g / litre of pure alcohol (lpa) and a maximum methanol content of 10g / lpa. The spirit traditionally produced using both cider and perry is called ‘cider and perry spirit’.
Strength
Cider spirit, perry spirit and cider and perry spirit sold to consumers each have a minimum alcoholic strength of 37.5% vol..
Permitted
- The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste.
- The addition of sugar will be limited to a maximum of 15g / litre of cider spirit, perry spirit and cider and perry spirit.
Not allowed
The addition of any other alcohol and the use of flavourings.
