Cider spirit, perry spirit and cider and perry spirit are produced by the distillation, at less than 86% vol., of cider or perry so that the spirit has an aroma and taste derived from the fruits used.
The spirits must have a minimum volatile substances content of 2g / litre of pure alcohol (lpa) and a maximum methanol content of 10g / lpa. The spirit traditionally produced using both cider and perry is called ‘cider and perry spirit’.
Cider spirit, perry spirit and cider and perry spirit sold to consumers each have a minimum alcoholic strength of 37.5% vol..
The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste. (2 years after the new spirits regulation takes effect, i.e. around spring 2021, the addition of sugar will be limited to a maximum of 15g / litre of cider spirit, perry spirit and cider and perry spirit.)
