Production Process
Distilled anis is anis which contains alcohol distilled in the presence of seeds of anise, star anise and/or fennel. For distilled anis spirits that are protected under a geographical indication, the use of mastic and other seeds, plants and fruits is also required. The distillate produced must contribute at least 20% of the alcoholic strength of the product. Other flavouring preparations and natural flavouring substances may also be used.
The process for making distilled anis involves one or a combination of the following: maceration and / or distillation; re-distillation of the alcohol in the presence of the seeds or other parts of the plants; addition of natural extracts of aniseed-flavoured plants.
