Fruit marc spirit is produced from the fermentation and distillation of fruit marc (freshly crushed, including skins, seeds, stems, etc.) other than grape marc. It must be distilled and / or re-distilled at less than 86% vol. and the spirit must have a (a) minimum volatile substances content of 2g / litre of pure alcohol (lpa), (b) maximum methanol content of 15g / lpa, and (c) maximum hydrocyanic acid content of 0.07g / lpa.
The sales name for the spirit is the name of the fruit followed by ‘marc spirit’. If more than one fruit is used the name is ‘fruit marc spirit’. (2 years after the new spirit drinks regulation takes effect, i.e. around spring 2021, when more than one fruit is used, the name may be supplemented by the name of each fruit in descending order of the quantity used.)
Fruit marc spirit sold to consumers has a minimum alcoholic strength of 37.5% vol..
The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste. (2 years after the new spirits regulation takes effect, i.e. around spring 2021, the addition of sugar will be limited to a maximum of 20g / litre of fruit marc spirit.)
The addition of any other alcohol and the use of flavourings.
