Production Process

Geist is produced either from (a) one of 32 named raw materials (fruits and berries), which are unfermented, or (b) vegetable, nuts or other plant materials such as herbs or rose petals.  It is possible to make the spirit from a further 4 raw materials.  In each case the raw materials are macerated (soaked so as to extract or concentrate flavours) in alcohol of agricultural origin and then distilled at less than 86% vol.

Strength

Geist sold to consumers has a minimum alcoholic strength of 37.5% vol..

Permitted

- The addition of sweetening products and colours (but see below).
- The addition of sugar will be limited to 10g per litre of geist.

Not allowed

Geist must not be flavoured.
It is not permitted to add colour to geist.
