Grape marc spirit or grape marc is a spirit made from grape marc (skins, seeds and stems of grapes from wine production) which have been fermented and distilled, directly by water vapour or after water has been added. Lees (yeast and other particles from wine production) may be added up to a limit of 25kg per 100kg of marc and provided the lees do not produce more than 35% of the alcohol in the final product.
Distillation must be carried out in the presence of the marc and re-distillation is permitted, each distillation taking place below 86% vol.. The spirit must have a volatile substances content of at least 1.4g / litre of pure alcohol and a maximum methanol content of 10g / litre of pure alcohol.
Grape marc spirit or grape marc sold to consumers has a minimum alcoholic strength of 37.5% vol..
The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste. (2 years after the new spirits regulation takes effect, i.e. around spring 2021, the addition of sugar will be limited to a maximum of 20g / litre of grape marc spirit / grape marc.)
The addition of any other alcohol and the use of flavourings.
