Production Process

Hefebrand or lees spirit is produced by the distillation, at less than 86% vol., of lees (yeast and other particles) of (a) wine or (b) fermented fruit.     (2 years after the new spirits regulation takes effect, i.e. around spring 2021, it will be possible also to use lees of beer as a raw material.)  The name hefebrand or lees spirit must be supplemented by the name of the raw material used.

Strength

Hefebrand or lees spirit sold to consumers has a minimum alcoholic strength of 38% vol..

Permitted

The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste. (2 years after the new spirits regulation takes effect, i.e. around spring 2021, the addition of sugar will be limited to 20g per litre of hefebrand or lees spirit.)

Not allowed

The addition of any other alcohol and the use of flavourings.
