Production Process

Hefebrand or lees spirit is produced by the distillation, at less than 86% vol., of lees (yeast and other particles) of (a) wine or (b) fermented fruit. It is possible also to use lees of beer as a raw material.  The name hefebrand or lees spirit must be supplemented by the name of the raw material used.


Hefebrand or lees spirit sold to consumers has a minimum alcoholic strength of 38% vol..


- The addition of caramel to adapt the colour and the addition of sugar to ‘round off’ the taste.
- The addition of sugar will be limited to 20g per litre of hefebrand or lees spirit.

Not allowed

The addition of any other alcohol and the use of flavourings.
