Production Process
Sloe-aromatised spirit drink or Pacharán is a spirit drink produced by the maceration (soaking so as to extract or concentrate flavours) of sloe berries in alcohol of agricultural origin, with the addition of natural extracts of anise and / or distillates of anise. A minimum of 125g of sloes must be used per litre of final product. The taste (predominantly of sloes), colour and organoleptic characteristics of sloe-aromatised spirit drink or Pacharán comes uniquely from the sloes and the anise.
Sloe-aromatised spirit drink or Pacharán has a sugar content between 80g and 250g per litre. The name Pacharán can only be used when the spirit is made in Spain. The spirits made elsewhere must be called sloe-aromatised spirit drink and can only refer to Pacharán if they also mention the name of the Member State or third country where they were produced.
