Production Process
Wine spirit is produced by the distillation, at less than 86% vol., of wine, wine fortified for distillation or wine distillate which has been distilled at less than 86% vol.. It must have a minimum volatile substance content of 1.25g / litre of pure alcohol and a maximum methanol content of 2g per litre of pure alcohol.
Where wine spirit has been matured, it can be sold as wine spirit provided that the maturation period is at least one year, or 6 months if the maturation takes place in casks holding less than 1,000 litres.
Strength
Wine spirit sold to consumers has a minimum alcoholic strength of 37.5% vol..
Permitted
- The addition of caramel to adapt the colour; the addition of sugar to ‘round off’ the taste
- The addition of sugar will be limited to a maximum of 20g / litre of wine spirit); and use of traditional methods.
Not allowed
The addition of any other alcohol and the use of flavourings.
